Anchor Text
The visible words inside a link, which describe the destination to anything that cannot see the page.
What it means
Anchor text is one of the few places you get to tell a machine what the page you are linking to is about. "Structured data field guide" does that. "Read more" does not.
The part a short definition leaves out
A couple of generic links are harmless. A page where every link says "learn more" has thrown away every one of those signals, and it is also worse for anyone navigating by link list.
Where this comes from

The inspection reports on this signal directly, alongside thirty-seven others, and tells you whether it is a quick fix on your site or something deeper.
